dinner stuffs

I REALLY love my boys :) with my whole heart! my guys are my world! but sometimes, I REALLY love it when they go to BED!! shhh... that's our little secret ;)

Anyhow, every mom has to start somewhere with her recipe collection, and one of my first recipes was something my Nanny made often... Chicken and Rice casserole with Doritos... mmmmmm :) It's so good. So here it is along with a few other things that I like to make because they are EASY!!!! Personally I'd rather BAKE than COOK, so simple is what I like!! (I have some awesome cookie recipes I'll put up later).

Chicken & Rice

1 pkg chicken breast-boiled or pressure cooked, then shredded
2 cups minute rice (uncooked)
2 1/2 cups broth from cooked chicken (if you don't have enough, mix a little hot water in until you do)
1 can rotel
1 can each: cream of chicken
cream of mushroom
cheese to go on top of casserole

After your chicken has been cooked, mix all ingredients together in a casserole dish. Microwave for 20 minutes. Then cover your casserole with cheese -any kind you like (our fave is american or velveeta, cheddar works too). Let it set for just a few minutes til the cheese is melted and you're done!! Use the doritos to scoop it or crumble them up in it.
**To cut in half like I do, use 1/2 pkg chicken, 1 can of either soup, and 1/2 can rotel (or sub diced tomatoes to keep it from being spicy), 1c rice, 1 1/4 c broth. That's it!! You use only 2 dishes to make this! *yay*
**Also, I have found that the generic brand of doritos at wal-mart taste just as good if not better than the brand name.

Veggies and Rice

2 pkgs Bird's Eye Steamfresh- Fresh Frozen Veggies, Asian Medley
White Minute Rice

This is so simple... make the amount of rice you need for your family size. Cook the veggies in the microwave following the directions on the bag. Put your veggies over your rice and your done!!! This is a one dish meal. With a family of 5 (only4 actually eating) we had plenty to go around. We topped ours with a little soy sauce and it was yummy. You could probably add some diced chicken in with it to make it even tastier and a little more filling.

Fettuccine Alfredo

1 pkg Bird's Eye Steamfresh broccoli cuts
Fettuccine OR Twisty noodles
1 jar Ragu alfredo sauce (it's the best and here it only cost two cents more than the generic)

For this, just cook your noodles (obviously), cook your veggies following directions on the bag. Then heat your sauce and when it's heated all the way through, mix your broccoli in with it. I like to mix my sauce, veggies, and noodles together when they're all done. Serve this up with some toast/bread and salad and you've got a quick meal. Again, you've only used two dishes to make this!!
**You can also get a bag of mixed veggies if you don't want just broccoli. It's yummy that way too!! Again, add some diced chicken for a little extra yumminess (is that a word??)

Ok, this next one... is GOOODDDD!! (if you like that kind of soup)

Tomato Soup

1 can (28oz) Italian Seasoned diced tomatoes
1 can (26oz) Campbell's Tomato soup (undiluted)
1 container (32oz) chicken broth
1/2 tsp freshly ground pepper

Pulse diced tomatoes in a food processor 3-4 times or until finely diced. Stir together tomatoes, soup, broth, and pepper in a dutch oven. Cook on medium heat about 10 minutes. That's it!! You can top off your individual servings with a dollop of sour cream. (I like to add shredded cheddar cheese and ritz crackers to mine).
**This recipe makes A LOT. You could probably freeze what you don't use, OR have it for lunch for a few days :)

Mom's Meatloaf

2 lbs ground beef
2 eggs
3/4 cup milk
2 slices of bread
2 tbs snipped parsley
1 tsp salt
1/4 cup ketchup
1 envelope onion soup

Preheat oven to 350 degrees. Mix all these together in a large bowl (I use my hands to do this... much easier and faster). Place in an oven safe dish. Bake for 1-1 1/2 hours. It is done when liquid runs clear.
Glaze: 1/4 cup ketchup
2 tbs brown sugar
1 tbs dry mustard
Glaze meatloaf 1o minutes before it's done.
** I cut this in half also and it feeds the 4 of us. We have it with mashed pots/gravy and mixed veggies and sometimes a salad. This is obviously NOT a one dish wonder... but I like to make when I'm in the mood to cook (rarely happens... hee hee).
**Also, this is actually a REALLY tasty meal. I know some hear the word 'meatloaf' and cringe, but give this a try just once. You may just like it! And if you don't, well, maybe you'll forgive me :)
p.s. The glaze is absolutely delicious!

  1. Every few months we still make Chicken Dorito Casserole. You made it for us once when we came for dinner and it was so yummy. I am not much of a casserole girl, but this is a good (kind of naughty - I mean chips for dinner is a little on the naughty side) dinner.
