INGREDIENTS:
- 4 slices whole wheat bread
- 2 6oz cans chunk light tuna
- 2tbs reduced fat mayo (I like miracle whip)
- 1tbs lemon juice
- 1tbs minced flat leaf parsley
- 1/8 tsp salt
- ground pepper
- dash of hot sauce
- 1/2 cup shredded sharp cheddar
- 2 tomatoes, sliced
Preheat broiler. Toast bread in toaster. Combine tuna, mayo, lemon juice, parsley, salt, hot sauce, & pepper. Spread 1/4 cup tuna mix on each slice of toast. Top with tomatoes and 2tbs cheese. Broil til cheese is bubbly. Serve immediately.
Like I said, I double this recipe and only have it on 1 slice of toast with fruit and yogurt and sometimes carrots for lunch and it satisfies me completely! Plus I love having it ready when lunch time gets here. I usually don't eat what I fix for the boys. Also, it only takes a couple of minutes for the cheese to melt in the oven with the broiler on. So delicious!! I don't mind having the same thing everyday for a week if it's something I love and I make big batches of this often. I found this recipe on Discovery Health.
