tomato soup

I really love tomato soup.
I mean

But I'm curious, what do you like to add to your soup?

I like cheddar cheese, a dollop of sour cream, and Ritz Crackers (this day, I had wheat on hand and it was still delish). I also like to add pepperoni in to the mix when I'm not interested in conserving money at the grocery store. Needless to say, it's been a really long time since I've add pepperoni to my soup. But I love it that way!

I also add a few spices, a little salt and pepper, and always Parsley! Plus, I cook mine with a can of milk, instead of a can of water. So much creamier! And always on the stove as opposed to the microwave. It cooks more evenly.

The boys like to have it with grilled cheese sandwiches. Sometimes I like it that way too. It's such an easy dinner sometimes. And very inexpensive.

And if you're not all about the condensed version, there's always this recipe, which is incredibly simple and tasty and has a little bit of texture to it:

Tomato Soup

1 can (28oz) Italian Seasoned diced tomatoes
1 can (26oz) Campbell's Tomato soup (undiluted)
1 container (32oz) chicken broth
1/2 tsp freshly ground pepper

Pulse diced tomatoes in a food processor 3-4 times or until finely diced. Stir together tomatoes, soup, broth, and pepper in a dutch oven. Cook on medium heat about 10 minutes.
**This recipe makes A LOT.
